Fermented using non-selective wild yeast. Extraction took place over 40 days on skins in tank before gentle pressing and moved to neutral French oak barrels. Aged for 15 months, before being bottled unfined and unfiltered.
Bottled at 20ppm FSO2, 40ppm TSO2.
Light and juicy, this Pinot is reminds of summer time hikes and foraging for wild berries.
Best enjoyed lightly chilled.
