The Root is a DIPA brewed with all Simcoe hops that we selected this past fall in Yakima. It is a beautifully simple beer built on a plush malt base and hopped entirely, and generously with Simcoe throughout the process. Simcoe is not only one of our favourite hops to brew with but it is also at the root of some of our favourite hoppy beers.
We taste notes of mandarin flesh, stone fruit and grapefruit. We’re very excited to be able to share this high octane display of Simcoe with you!
