
The concept around Rose Friday was to create a bright and rose coloured saison by fermenting the same wort separately in both white and red wine barrels. We then blended the beer together and performed a secondary fermentation on fresh raspberries from our friends @willowtree_farm . After bottle conditioning for several months, the beer is ready and we're super pleased with the result. It's a great balance of bright fruit, some subtle funk character and traditional saison phenolics. It's super fun to see these little projects come to life, and we're really excited to share it with you!
