Made with Niagara Peaches and Apricots on a malt base of our farm grown barley.
Fermented with a locally captured strain of Lachancea thermotolerance, from Guelph’s Escarpment Labs, that’s been named Lactic Magic. It produces a nice bit of tartness that complements the fruits beautifully. Fermentation was then finished with our house farmhouse yeast.
