MIXED FERMENTATION SOUR TABLE SAISON (2019 WINE BARREL AGED)
Our mixed fermentation sour table saison brewed with wheat, oats and rye. Fermented with our house culture of wild yeast and bacteria that we developed over the years prior to opening our brewery. Conditioned for over a year in our solera tanks and for an additional year in wine barrels. Notes of tart lemon zest, barnyard funk, earthy spice, stone fruit and oak vanillin, with a light minerality and pronounced but balanced level of acidity. Conditioned in bottle for over a year to provide an effervescent texture and high carbonation.
