Cold IPA w/ Cascade & Eclipse

In this case we chose to not flight (aka we don’t offer tasting flights). Not just us but also our friends @matronfinebeer and hence the inspiration for our collaborative brew. Now, we can’t speak for them but for us we want people to sit down with a glass of beer, relax and enjoy the soup-ed up, hoppy barley water unfold as they drink. The idea of rapid-fire sampling seems to run contrary to that and never really felt like us. Anyways… enough about the name and into the important stuff. This Cold IPA was brewed ‘Matron-style’ with a heavy focus on Ontario ingredients (props to you folks 🦾). We used Ontario malt from @barnowlmalt and dry hopped with Ontario cascade hops from @pleasantvalleyhopsontario followed by a seasoning of some eclipse hops from Australia (we needed some southern hem hops in there, sorry). The result is a dank and piney, semi-clear hop juice with a classic grapefruit rind and citrus note established by the cascade/eclipse tag team. Ok that’s ALLLLL great guys but what the hell is a Cold IPA? Well little robins, we’ll tell you: a cold IPA is essentially just an IPA fermented with a lager yeast at cooler temps than normal. FUN, RIGHT?
