Vineyards
This sleek, juicy wine was made from grapes sourced from select vineyards in the Niagara Peninsula.
Winemaking
Aging in French and American cooperage for 10 months has knitted together ripe tannins over a medium-bodied frame interwoven with a dash of sultry new oak, crushed red fruit, and a firm backbone of acidity which naturally marked the 2019 growing season.
Tasting Notes
This elegant blend lends suppleness to the palate that allows for real pleasure now with aging potential for surely a decade.
Food Pairing Suggestions
Pair with beef dishes such as a well-aged Ribeye steak lightly charred on the BBQ, a classic pot roast, or a rich Italian meat sauce. After dinner with aged cow's milk cheese such as cheddar or Comte. For lighter options, try it with a portobello burger or a roasted vegetable lasagna.
Critical Acclaim
“Dark cherry/berry fruit aromas interlace with graphite and earthy bits preceding a surge of palate flavours—dark Bing cherry and black plum—underpinned by a lick of ripe tannin. This is medium-plus bodied with good mouthfeel and a lingering finish and aftertaste that replays palate flavours. This was made for grilled meat and spring/summer is on the way. Give this a go with striploin rubbed with © Hy’s Seasoning Salt grilled the way you like them.” Score 92 Vic Harradine, winecurrent.com
“This is a Niagara sourced blend of Merlot (49%), Cabernet Franc (43%) and the rest Cabernet Sauvignon that is aged in French and American oak for 10 months. It has a big nose of ripe dark cherries, cassis, muddled herbs, dark chocolate and spice notes. The Cabernet Franc makes itself known on the palate with lovely savoury notes to bolster the bevy of ripe cherries, brambly raspberries, herbs, anise and spicy bite on the bright finish. Can cellar 5+ years.” Score 92 Rick Vansickle, winesinniagara.com
